Sweet Corn Bread

This is basically the corn bread recipe off the back of every bag of Aunt corn meal with a little sweetness added to make it play well at breakfast as well as dinner.

Ingredients:

1 cup corn meal.
1 cup All-Purpose flour.
3 Tbsp sugar.
1 Tbsp baking powder.
1/4 cup vegetable oil or shortening.
1 Tbsp honey (one squeeze of the honey bear).
1/2 Tsp salt.
1 cup milk.
1 egg.

1 medium mixing bowl.
1 cast iron skillet or Pyrex pie pan.

Directions:

1. Preheat oven to 425°F and insert pan to heat.

2. Add corn meal, flour, sugar, baking powder and salt to mixing bowl and combine with a fork. Add vegetable oil, honey, milk and egg and mix into a smooth batter.

3. Remove pan from oven and fill evenly with corn meal batter.

4. Bake for 20 - 25 minutes or until a wooden toothpick inserted into the center comes out clean.

Serving Details

Serve along side anything you might find at a country dinner table, or ice cream. Really.
