Roast Duck Breast with Mixed Berry Sauce

Ingredients:

half onion finely chopped.
10 ml sunflower oil.
300ml chicken stock.
30 ml port wine.
225 g frozen mixed berries.
30 ml redcurrant jelly.
salt and pepper.
ground pepper.
4 skinless duck breast.
french beans to serve.

Directions:

preheat oven to 220 c ,place the onion and oil in a sauce pan and cook for 10 min,
until the onion has softened.
Add the stock and port and turn the heat up to reduce the liquid by half,
add the frozen berries and redcurrant jelly ,stir and simmer for 10 minutes,
season with salt and pepper to tast.
place the duck breast in a roasting try and season with pepper,cook in the oven for about,
18-20 minutes.
to serve slice the duck breast diagonally and place on four individual serving plates
accompanied by the mixed berry sauce and some french beans.
