Mussels In White Wine & Garlic

Ingredients:

1kg/2.2lb fresh mussels (cleaned)
1 medium onion diced
Bunch of parsley chopped
2 teaspoons of garlic puree
150ml white wine
2 plum tomatoes sliced
75ml double cream
2 tbsp olive oil

Directions:

In a large pan, heat olive oil. Add onions and garlic and cook for 2 minutes. Add mussels and cook for 1 minute. Add white wine and cover with lid and cook for five minutes or until all mussel shells have opened. Add cream and cook for further 3 to 4 minutes. Add chopped parsley and tomatoes and serve with crusty French bread.
