Mushroom Risotto with Garlic, Tyme and Parsley

Serves 6.

Ingredients:

225g mushrooms one type or mixed.
3 tb olive oil.
1 small handfull of tyme picked and chopped.
1 clove of garlic.
salt and pepper.
1 hand full of parsley roughly chopped.
1 pinch chilly powder a squeeze of lemon juice.

Directions:

Slice the mushrooms thinly, but tear the the girolles,chanterelles and blewit in half, dont cook all the mushroom at once do them 2 or 3 baches,in a very hot pan heat olive oil and add the mushroom and thyme .cook for about a minut toss them then add the garlic, and a pinch off salt, cook for another of couple of minutes and then tast ad some parsley and avery small amount off chilly powder and squeese of lemon,toss again tast again by now they should be pretty much perfect,chop half the cooked mushrooms.

At basic recipes stage 2 after the first ladle of stock has been addad ,add the chopped .mushrooms,and add the remainder at stage 3.
