Italians Plum Tomatoes baked with Goats Cheese and Peso Croutons

Ingredients:

Serves 4

12 plum tomatoes cut top and bottom off it will stand firm.
120gr goat cheese.
120 gr mixed salads leaves.
1 french stick sliced in angles and toasted.
Peso dressing (see basics).

Directions:

Cut tops off tomatoes and scoop out the tomatoes flesh. Fill the tomatoes with goats cheese and place in a medium hot oven for 10 min put back the lid on tomatoes. Mix saladleaves together with pesto put in center of plate tomatoes around leaves then the toasted croutons and drizzled with dressing.
