Grilled Medallions of Beef with a Parsley, Tomato & Garlic Crust

Serves 4

Ingredients:

8 x 3oz – 90g Portions of Beef Fillet (get your butcher to cut these)

80g Parsley.
½ medium onion (cooked until soft).
½ white loaf (1-2 days old is best).
50g sun blushed tomatoes.
1 teaspoon garlic puree – 30g butter (soft).
4 Portions vegetables & potatoes (see basics).

Optional.
2 tablespoons olive oil – 20g butter – 300ml – 1½-pint Madeira sauce.

Directions:

In a food blender put parsley, sun blushed tomatoes & garlic, blend for two mins. Add bread & blend for 3 mins. Add butter & onions & blend for 30 seconds.

Add more salt & pepper if required. Reserve for later.

On a griddle plate place seasoned & lightly oiled beef. Turn beef after 30 seconds to create criss – cross effect on beef.

Cook for a further 30 seconds & then place in a hot pan into oven temp 180oC – 370oF – gas 6 for required time:

2 mins Rare.
6 mins Medium.
9 mins Well Done.

Reheat vegetables.
