Almond Biscuits with a Trio of Ice Creams

Ingredients:

2egg whites.
6 digestive biscuits crushed.
20 raspberries.
4 sprigs mint.
60g/2oz icing sugar.
60g/2oz plain flour.
100g/4oz flaked almonds.
40g/1 ½ oz butter.
¼ teaspoon ground cinnamon.
12 scoops of ice cream (see basics or buy from supermarket).

Directions:

Whisk egg whites and icing sugar until well combined. Mix in flour, butter, almond and cinnamon.
On a baking tray spread out a circle of biscuit mix approx 4 inch/ 10cm in diameter and bake in a pre-heated oven 180c/ gas4 for 10 minutes, allow to cool.
Place one biscuit in centre of plate and then one scoop of ice cream until you have three layers of biscuit and ice cream.
Sprinkle biscuit over ice cream, garnish with mint leaves and fresh raspberries.
